Spaghetti Squash

Spaghetti Squash is one of our favorite things to eat for dinner! It's simple, nutritious and is a great way to bring the flavor of fall to your table. Now let's start cooking with each other.

This is a Spaghetti squash. They are inexpensive and make a lot of food.

First pre heat your oven to 425

Cut the end of the Spaghetti squash cut it into half.

With a spoon scoop out the seeds. They will remind you of the inside of a pumpkin.

Then with organic olive oil drizzle the inside of the speghetti squash.

Salt and pepper it to your desired taste.

Flip the Spaghetti squash and place in oven for about 30 to 45 mins.

While its cooking get out your favorite pasta sauce and some veggies. I am using my homemade roasted red pepper pasta sauce and pairing them with some fresh tomatoes.

Slice your tomatoes.

Saute your tomatoes with some salt and pepper and olive oil.

Now add your pasta sauce to your pan with your tomatoes.

Get your Spaghetti squash from the oven and let cool for a few mins. Then gently with a fork pull the squash apart from the rind. It will look like spaghetti (thats there it gets its name from).

Add the Spaghetti squash to your sauce pan.

Mix well.

After its all combined place it in a baking dish and sprinkle some mozzarella cheese on top. Then place in oven till the cheese melts.

Then chiffonade some fresh basil on top.

My spaghetti squash dinner is one our dinner staples. It's so easy and you can change it up my adding a different sauce. It goes great with a pesto, tomato, or Alfredo sauce. Possibilities are endless. Let me know how this recipe works out for you.
