Roasted Red Pepper Chili

I am very proud to share with you my very own slow cooker recipe, Roasted Red Pepper chili, that is easy to make and a real crowd pleaser.

The slow cooker gospel according to me...

If you can't just dump a bunch of yummy ingredients in a "Crock Pot," and forget about it...then it's not a slow cooker recipe.

The best part of a slow cooker is that its yummy and low fuss. There are a few additional easy steps for this chili that are worth it.

That being said I hope y'all enjoy this Eichelberger family favorite.

Roasted Red Pepper Chili

Ingredients:

  • 1 or 2 Large Organic Chicken Breasts (I just used 1 and it was plenty of chicken).

  • About 1/2 cup of diced Shallots or 1 medium onion.

  • 1 1⁄2teaspoons onion powder

  • 1 tablespoon Olive Oil

  • 2(15 1/2 ounce) cans great northern beans, rinsed and drained

  • 1(14 1/2 ounce) can chicken broth ( just make sure to cover all ingredients with the broth. The amount can vary depending on if you used 1 or 2 large chicken breasts).

  • 1 teaspoon salt

  • 1 teaspoon oregano

  • 1⁄2teaspoon pepper

  • 1⁄4teaspoon cayenne pepper

  • 1 cup sour cream

  • 1⁄2cup whipping cream

  • a heaping 1/2 cup of Roasted Red peppers ( you can roast your own or buy a jar like I did).

  • (optional) Chopped green onion, and some shredded cheddar for garnish.

Directions:

I like to first lay out all my ingredients so that I have everything handy and ready to go.

Place 1 Tablespoon of Olive Oil in the bottom of your Slow cooker.

Next Place your Chicken in the Slow cooker

Chop up your shallots

Then dump on top of the chicken

Open up your two cans of Northern Beans and Rinse.

Now dump on top of the chicken. Then add your 1 1⁄2 teaspoons onion powder, 1 teaspoon of salt,

1 teaspoon oregano, 1⁄2 teaspoon pepper, and 1⁄4teaspoon cayenne pepper.

Start roughly chopping up your roasted red pepper.

Add it on top of the beans and cover with your chicken broth.

You have two options:

1. set timer on High for 4 hrs

2. set timer on low for 6hrs

This is the best part of the whole process! You now have freedom to do whatever you want. Chill, read a book, play with your kids, run some errands, work out, or fold that dreaded never ending laundry of yours.LOL!

Time has passed and now your house has a delicious smell of yum!

Take your chicken out of your slow cooker and shred the chicken. I found this awesome easy way to get the most out of your chicken.

Use your whisk attachment for your stand mixer or a hand held power mixer works well too.

Place your chicken in the mixer and let it rip!

After the chicken is shredded add it back to your slow cooker.

Now mix in your 1/2 cup of whipping Cream and 1 cup of sour cream

Mix well

Top your chili with some fresh chopped green onions, shredded cheddar cheese. Some Avocado could be yummy too.

Now go out and enjoy your Chili! Dinner tastes better when you actually have time to sit back, relax and enjoy the sunset.
