Lucky Colcannon

On St. Patricks Day I make a traditional Irish dish for dinner called Colcannon. The best part of Colcannon is that my kids love it and it's quick and easy!

I learned about this dish while watching Tyler Florence's show on Food Network some years back. The traditional recipe on the show takes almost 2hrs to make (An't nobody got time for that...LOL) , however over the years of making Colcannon, I have perfected a simpler version that takes about 30 mins to whip up.

Semra's Lucky Colcannon

Ingredients

Semra's Pearl of wisdom: I eyeball this recipe. Depending on how many people you are feeding, just up or lower the amount of ingredents evenly.

A bag of russet potatos ( I used a 5lbs bag and only had three left over)

1 head of cabbage ( I use about 3/4 of it (cut into squares)

1lbs of diced THICK sliced Ham ( I use Boars Head from the Publix deli)

About 1/2 cup of sliced Green Onion

1/2 cup Flat leaf Parsley (roughly chopped)

1 stick of butter ( I use Kerrygold Butter)

Salt and Pepper to taste

Directions

Turn on some Traditional Irish Folk Music on Pandora Radio to get you in the Colcannon mood.

Peel Potatoes and cut into cubes and cover with water. Place on high heat till the potatos start to boil, then reduce heat to medium.

While the Potatoes start to cook. Boil the cabbage till it turns a darker color (add 1 tablespoon of butter to the boiling cabbage to tenderize it). Then Drain the cooked cabbage. Set aside. Cook Ham till it boils, then drain.

Drain the Potatoes, return to pot, Add some milk and butter and mash potatos throughly.

Next add cabbage, scallions, parsley and ham to mashed potatoes, stirring them in gently.

Before serving, make an indentation on the top by swirling a wooden spoon. Put 1 tablespoon of butter into indentation. Sprinkle with parsley.
