Fresh Fast

Sometimes I need to make yummy, fresh food and I need to make it fast!

My oldest daughter, Sahara, is a cheerleader and cheer nights are a whirlwind. It's always a mad dash to try and figure out "what's for dinner."

Today, I harvested a bunch of fresh herbs from my garden and sold them at my favorite grocery store in Winter Garden FL, called the Farmacy.

The Farmacy is a beautiful store where local farmers can bring their organic goods and sell them. It is the best place to buy fresh, local produce as well as local humane chicken, eggs, beef, etc. The best part is you don't even have to wait for the Farmer's Market on Saturday

(HEY reader...BTW, this will not be the last time I mention the Farmacy. Its my all time favorite spot! I'll have a bigger post on them a little later in the month)

Since all the food is seasonal, I was lucky to get some delicious organic lettuce and sweet cherry tomatoes.

Together they made the perfect salad. Simple, classic, and delicious.

However it was missing a little something....oh yeah...the dressing!

No naked salads in my house...LOL!

I decided to whip up a quick vinaigrette. I give you my...

Sweet Honey poppy seed dressing

Ingredients:

3 Tablespoons of Local Organic Honey (if you can get your hands on some)

1 Tablespoons-plus 2 teaspoons of apple cider vinegar

1 Tablespoon of Olive Oil

1 Tablespoon of fresh minced shallots

1 Teaspoon of fresh squeezed lemon juice

1/2 teaspoon of poppy seeds

salt and pepper to taste

Directions:

Whisk all the ingredients together till it is blended thoroughly. Make sure the honey is dissolved.

Drizzle the dressing over your salad, and enjoy!
